At the end of the garden season, after you harvested, canned, dehydrated, blanched all you could, but still have left over tomaotes, simply freeze them. Here's how to do it: wash the tomaotes, remove any blemishes from the fruit. Cut them in uniforme sizes, pack them in freezer bags. Through them in the freezer. Use quart sized bags, free them in the quantity that you will most likely to use. Pack the tomaotes in a papper box, label, seal and freez. 

The frozen tomatoes come in handy when cooking in the winter time. Use it anytime you are making a tomato based sauce or dish. You can add them to spagetti sauce, use it for beef barley soup, making mexican stew meat (beef, pork or chicken), or use them in jambalaya.Freezing garden tomatoes
